How to cook
Plating & presentation
Bring the whole tray to the table — the golden chicken, jewel-bright tomatoes, glistening olives, and caramelised potatoes make for a stunning centrepiece. For individual plates, place two chicken thighs on each warmed plate alongside a generous scoop of the potato and tomato mixture. Spoon the roasting juices liberally over everything and add a roasted lemon wedge on the side. A scattering of fresh rosemary leaves finishes the dish beautifully.
Dana's tip
The secret to truly crispy chicken skin in a tray bake is to never cover the tray and to make sure the skin is bone dry before it goes in. Any moisture on the surface steams the skin instead of crisping it. If you have time, leave the seasoned chicken uncovered in the fridge for an hour before roasting — the air-drying effect makes a noticeable difference to the final crunch.
