How to cook

Plating & presentation

Pile the golden pakoras generously in the centre of a wide plate or shallow bowl lined with a sheet of plain paper to absorb any excess oil. The irregular, craggy shapes and deep golden colour are the whole visual appeal — do not try to arrange them neatly. Serve two dipping sauces alongside in small bowls: a bright green mint and coriander chutney and a dark, sticky tamarind sauce. Scatter a few fresh coriander leaves over the top and finish with a light dusting of chaat masala for authentic street-food tang. Serve immediately.

Dana's tip

Chickpea flour is the key to both the flavour and the gluten-free crispiness of pakoras — do not substitute plain flour. The batter must be thick; a thin batter produces pale, oily results. For extra crunch, add a pinch of bicarbonate of soda to the batter just before frying — it creates tiny air bubbles that make the coating even lighter and crispier. You can vary the vegetables freely: cauliflower florets, sliced aubergine, whole chilli peppers, and fresh paneer all work beautifully. Always fry in small batches — overcrowding drops the oil temperature and turns crispy pakoras into soggy ones.
