How to cook
Plating & presentation
Stack the golden samosas in a loose pile on a lined plate or basket, points facing upward so their triangular shape is on full display. Serve with two dipping sauces in small bowls alongside — a vibrant green mint and coriander chutney and a dark, sticky tamarind sauce. Scatter a few fresh coriander leaves over the samosas and finish with a light dusting of chaat masala for that authentic street-food tang. Serve immediately — samosas are at their best the moment they come out of the oil.
Dana's tip
The secret to shatteringly crisp samosa pastry is keeping the dough firm and the oil temperature steady at 170°C. A soft dough produces a bready, chewy crust rather than a crisp one. Make sure the filling is completely cold before filling — warm filling creates steam inside the pastry during frying which softens the crust from within. For a gluten-free version, use a good gluten-free plain flour blend; the texture will be slightly more delicate but still delicious. Samosas can be shaped and refrigerated uncooked for up to 24 hours, making them ideal for preparing ahead.
