Lamb Seekh Kebab
Spiced minced lamb blended with fresh herbs, ginger, and garlic, shaped onto skewers and grilled until smoky and charred. A beloved Indian street-food starter that is naturally gluten-free, dairy-free, and bursting with bold, aromatic flavour.
How to cook
Plating & presentation
Lay the charred seekh kebabs diagonally across a warm platter or wooden board, slightly overlapping. Scatter thin rings of raw red onion over and around the kebabs — their sharpness cuts through the richness of the lamb beautifully. Tuck bright lemon wedges at each end and finish with a generous handful of fresh coriander leaves. A small bowl of vibrant green mint chutney on the side completes the classic presentation. The contrast of the deep charred kebabs against the bright garnishes is the whole visual story.
Dana's tip
Fat content is everything with seekh kebabs — use lamb mince with at least 20% fat. Lean mince produces dry, crumbly kebabs that fall off the skewer. The kneading step is non-negotiable: under-kneaded mixture will not bind properly and will break apart on the grill. If your mixture feels too soft to hold its shape even after chilling, add 1 tablespoon of chickpea flour (gram flour) — it is gluten-free and acts as a binder without affecting the flavour. Flat metal skewers work better than round ones as they grip the meat and prevent it spinning when you turn them.
