Coconut & Cardamom Rice Pudding
A fragrant, slow-simmered Indian kheer made with basmati rice, full-fat coconut milk, and ground cardamom — finished with saffron, rosewater, and toasted almonds. Naturally dairy-free and gluten-free, and deeply comforting served warm or chilled.
How to cook
Plating & presentation
Serve the kheer in small, deep bowls or traditional clay pots — the rustic vessel suits the homely warmth of the dish. The pudding should be pale ivory with golden saffron threads visible throughout and a gentle yellow tint from the spice. Scatter the toasted flaked almonds and bright green pistachios over the surface in a generous layer — the crunch of the nuts against the silky pudding is an essential part of the experience. Add a pinch of dried rose petals for colour and fragrance. A light drizzle of coconut cream over the top just before serving adds a beautiful sheen and extra richness.
Dana's tip
The secret to a great kheer is patience — it cannot be rushed. Keep the heat low once the coconut milk goes in and stir regularly; high heat will cause the coconut milk to split and the rice to stick. Freshly ground cardamom makes a dramatic difference here: buy whole green cardamom pods, split them, and grind the seeds in a pestle and mortar just before using. Pre-ground cardamom loses its floral, citrusy fragrance quickly and tastes flat by comparison. Add the rosewater off the heat — boiling drives off the delicate floral notes and leaves a soapy aftertaste. A small amount goes a long way, so measure carefully.
