Lamb Rogan Josh
A slow-braised Kashmiri classic of fall-apart tender lamb in a deeply aromatic, brick-red sauce built from whole spices, Kashmiri chillies, and slow-cooked onions. Naturally gluten-free and dairy-free — rich, warming, and utterly satisfying.
How to cook
Plating & presentation
Ladle the rogan josh into a warm, deep bowl or serve in the pot at the table for a dramatic centrepiece. The sauce should be a deep, glossy brick-red — the colour of a great rogan josh is its most striking feature, and it comes entirely from the Kashmiri chilli powder rather than from food colouring. The lamb pieces should be visibly tender, with the sauce clinging thickly to them. Scatter fresh coriander over the top and add a few thin rings of green chilli for colour. Serve with fluffy basmati rice and warm naan or roti to mop up every last drop of the sauce.
Dana's tip
Kashmiri chilli powder is non-negotiable for authentic rogan josh — it gives the sauce its iconic deep red colour and mild, fruity heat without making the dish fiery. Regular chilli powder will make it too hot and the colour will be wrong. The other key is time: rogan josh is a slow-braise and the lamb genuinely needs the full cooking time to become tender. Bone-in cuts (shoulder or leg) give far more flavour than boneless — the marrow and collagen from the bones enrich the sauce as it cooks. If you have time, this dish is even better made a day ahead and reheated; the flavours deepen overnight.
