Goan Fish Curry
A vibrant, tangy coconut curry from India's sun-drenched coast — firm white fish simmered in a golden sauce of coconut milk, tamarind, and warming spices. Naturally gluten-free and dairy-free, with bold, bright flavours that taste like the sea.
How to cook
Plating & presentation
Ladle the curry into wide, shallow bowls, making sure each portion has generous chunks of fish and plenty of the vivid golden-orange sauce. The colour of a good Goan curry — deep turmeric gold with a slight orange blush from the Kashmiri chilli — is its most striking feature. Scatter fresh coriander leaves over the top and add a slit green chilli for colour. Serve alongside a mound of steamed basmati rice and, if you like, a wedge of lime for squeezing. The sauce is too good to waste — make sure there is plenty of rice to soak it up.
Dana's tip
Tamarind is the soul of a Goan fish curry — do not substitute lemon juice, which gives a sharp, one-dimensional sourness rather than the deep, fruity tang of tamarind. Ready-made tamarind paste from a jar is perfectly good here. The other key is not to overcook the fish: add it to a gently simmering (not boiling) sauce and resist the urge to stir. A rolling boil will break the fish into flakes; a gentle simmer keeps the chunks intact. If you are nervous about timing, err on the side of undercooking — the residual heat in the sauce will finish the job after you take the pan off the heat.
