Chicken Biryani
A showstopping layered rice dish of fragrant saffron basmati, tender spiced chicken, and crispy caramelised onions — slow-cooked together so every grain absorbs the aromatics. Gluten-free and dairy-free, and worth every minute of the process.
How to cook
Plating & presentation
Serve the biryani on a large, wide platter or in a deep serving bowl, gently mixing the layers as you transfer so each portion gets both the golden saffron rice and the tender spiced chicken. The contrast of the white rice, golden saffron streaks, and dark caramelised onions is the visual signature of a great biryani — do not over-mix or it becomes uniform. Scatter extra fresh coriander and mint leaves over the top and add a few of the reserved crispy onions for crunch. Serve with a cooling cucumber raita (use coconut yogurt to keep it dairy-free) and lemon wedges on the side.
Dana's tip
The two secrets to great biryani are deeply caramelised onions and par-cooking the rice to exactly the right stage before layering. Under-cooked onions taste raw and sharp; over-cooked rice turns to mush during the dum stage. The rice should have a firm white core when you drain it — it finishes cooking in the steam. Sealing the pot tightly for the dum stage is essential; every wisp of steam that escapes is flavour and moisture lost. If you have a heavy cast-iron pot with a tight lid, use it — the even heat distribution makes a noticeable difference.
