How to cook
Plating & presentation
Ladle the tikka masala into a warm, deep bowl or karahi, making sure each portion has plenty of the glossy orange-red sauce. The charred edges of the chicken pieces should be visible through the sauce — they signal the smoky depth inside. Scatter a generous handful of fresh coriander leaves over the top and add a small swirl of coconut cream for a restaurant-style finish. Serve alongside a mound of fluffy basmati rice and warm roti. A wedge of lemon on the side cuts through the richness beautifully.
Dana's tip
The two things that make or break a tikka masala are the char on the chicken and blending the sauce smooth. Do not skip either step. Grilling the marinated chicken over very high heat until it has real colour — not just cooked through — creates the smoky, caramelised flavour that defines the dish. And blending the tomato-onion base before adding the coconut cream gives the sauce its signature silky texture. Coconut cream is a perfect dairy-free substitute for the traditional double cream; use full-fat for the richest result.
