Turkish-Style Grilled Chicken Skewers (Tavuk Şiş)
Tender chunks of chicken thigh marinated in a deeply spiced yogurt-free, dairy-free blend of olive oil, lemon, garlic, and warm Turkish spices — grilled over high heat until charred at the edges and juicy within. A classic Turkish mezze starter, gluten-free, dairy-free, sesame-free, nut-free, and egg-free.
How to cook
Plating & presentation
Lay the skewers across a wide, flat serving plate or a wooden board, slightly overlapping, so the charred, spiced surface of the chicken is fully visible. The deep rust-red and golden-brown of the grilled chicken against the white of the plate is striking on its own — do not crowd it with too many garnishes. Pile the lightly pickled red onion in a small mound at one end of the plate, its vivid pink a beautiful contrast to the dark chicken. Scatter the flat-leaf parsley loosely over the skewers. Arrange lemon wedges along the side, cut faces up. A final drizzle of extra-virgin olive oil over the hot chicken just before serving adds a glossy sheen and a fresh fragrance. If serving as part of a mezze spread, place the skewers in the centre of the table as the main protein and arrange the dips, salads, and bread around them.
Dana's tip
Chicken thighs are non-negotiable for tavuk şiş — breast meat dries out on the grill before it has time to develop any char, and the result is tough and flavourless. Thighs have enough fat to stay moist and juicy even over the high heat needed for proper caramelisation. The longer the marinade, the better — overnight in the fridge produces noticeably more tender, more deeply flavoured chicken than a 2-hour marinade. If you have pul biber (Turkish Aleppo-style chilli flakes), use it in place of standard chilli flakes — it is milder, fruitier, and more complex, and is the authentic spice for this dish. It is widely available in Middle Eastern and Turkish grocery stores and online. The quick-pickled red onion served alongside is a traditional accompaniment and is worth the 2 minutes it takes — the acidity cuts through the richness of the grilled chicken and the sweetness of the spiced marinade perfectly. These skewers reheat well in a hot oven for 5 minutes if making ahead, though they are always best eaten fresh off the grill.
