How to cook

Plating & presentation

Place two pepper halves on each warmed plate, cut-side up so the golden mozzarella and colourful filling are fully visible. Spoon the passata sauce from the roasting dish around the base. Scatter a few fresh basil leaves over the top and finish with a drizzle of your best olive oil. The contrast of red, yellow, and orange peppers makes this dish as striking as it is delicious.

Dana's tip

Use a mix of red, yellow, and orange peppers — they are sweeter and more flavourful than green once roasted. Green peppers work but can taste slightly bitter. If your rice is freshly cooked, spread it on a tray and let it cool completely before mixing — warm rice makes the filling soggy and the mozzarella melt too early.
