Saffron Risotto with Zucchini

The golden jewel of Milanese cooking — a luxuriously creamy saffron-scented risotto lifted with tender zucchini ribbons and finished with a generous hand of Parmesan. Elegant yet deeply comforting.

How to cook

Plating & presentation

Spoon the risotto into warmed, wide shallow bowls and tap the base gently on the counter so it spreads into an even layer. The colour should be a deep, glowing gold. Lay a few raw or lightly sautéed zucchini ribbons on top for freshness and contrast, add a fine dusting of extra Parmesan, and finish with a thread of olive oil. Serve the moment it is plated — risotto waits for no one.

Dana's tip

The mantecatura — the vigorous off-heat beating with cold butter and Parmesan — is what gives risotto its signature creamy, wave-like consistency. The rice should never be stiff or dry. If it tightens up before you serve, stir in a small splash of hot stock to loosen it back to the right texture.
