How to cook

Plating & presentation

Spoon the polenta into the centre of a wide, shallow bowl and spread it slightly with the back of the spoon to create a soft mound. Arrange the roasted vegetables on top, letting the colours of the yellow and red peppers contrast with the golden zucchini. Lay a roasted rosemary sprig across the top for a rustic finish and drizzle with olive oil.

Dana's tip

The secret to great polenta is patience and constant stirring — never walk away from it. If the polenta becomes too thick before it is fully cooked, add a splash of hot water or stock and keep stirring. For an extra-rich result, stir in a spoonful of mascarpone along with the butter at the end.
