Carpaccio di Manzo
Paper-thin slices of raw beef fillet dressed with lemon, extra-virgin olive oil, shaved Parmesan, and a handful of peppery rocket. An elegant Venetian classic that lets the finest beef speak for itself.
How to cook
Plating & presentation
Arrange the beef slices so they cover the entire plate in a thin, even layer with slight overlaps. Pile the rocket loosely in the centre rather than spreading it flat — height adds elegance. Scatter Parmesan shavings and capers across the whole plate and finish with a drizzle of your finest olive oil in a slow spiral.
Dana's tip
Source the very best beef you can find — this dish is raw, so quality and freshness are everything. Ask your butcher for centre-cut fillet and tell them it is for carpaccio. Chill your serving plates in the fridge for 15 minutes before plating to keep the beef cold and firm right up until the moment it is served.
