How to cook

Plating & presentation

Pile the arancini on a warmed plate or wooden board lined with parchment. Serve with a small bowl of warm tomato sauce or aioli for dipping. A wedge of lemon on the side cuts through the richness beautifully. Serve within 5 minutes of frying — the mozzarella centre is at its best when still molten.

Dana's tip

Cold rice is essential — never try to shape warm risotto. Cook the rice the day before and refrigerate overnight for the best results. The colder and firmer the rice, the easier it is to shape and the less likely the arancini are to burst open during frying.
