Sicilian Orange & Almond Cake
A legendary Sicilian flourless cake made with whole boiled oranges and ground almonds — intensely fragrant, naturally moist, and completely gluten-free. Dense with citrus perfume and almond richness, it is one of the most beloved cakes in all of Italy.
How to cook
Plating & presentation
Place the cooled cake on a simple white or terracotta plate — its deep golden-brown top and rustic, slightly sunken centre are part of its charm; do not try to disguise them. Dust a generous snowfall of icing sugar over the surface through a fine sieve, then scatter a handful of toasted flaked almonds across the top. A few thin curls of fresh orange zest add a final flourish of colour. Serve in generous wedges with a small pot of strong espresso alongside — this is how it is eaten in Sicily.
Dana's tip
Use unwaxed oranges — the whole skin goes into the cake, so waxed fruit will leave a chemical aftertaste. Navel oranges work well, but blood oranges in season produce a stunning deep-pink batter and a more complex, slightly berry-like flavour. The cake sinks slightly in the centre as it cools — this is completely normal and not a sign of underbaking. It is the nature of a flourless cake. The sunken centre is traditionally filled with a dusting of icing sugar, which is all it needs.
