Insalata Caprese
Thick slices of buffalo mozzarella and ripe tomatoes layered with fresh basil, finished with extra-virgin olive oil and a pinch of flaky salt. Simple, stunning, and unmistakably Italian.
How to cook
Plating & presentation
Serve on a wide, flat plate or a rustic wooden board. Alternate the red tomato and white mozzarella slices in a neat overlapping row or a circular fan. Tuck basil leaves throughout and finish with a final drizzle of olive oil. The colours of the Italian flag — red, white, and green — should be clearly visible.
Dana's tip
The secret to a great Caprese is temperature. Take the mozzarella out of the fridge 30 minutes before serving — room-temperature mozzarella is incomparably creamier and more flavourful than cold. Use the ripest, most fragrant tomatoes you can find; this dish has nowhere to hide.
