Italian Poached Pears with Vanilla
Whole pears gently poached in a fragrant vanilla and white wine syrup until blushing, tender, and jewel-bright. An effortlessly elegant Italian dessert that is naturally dairy-free, gluten-free, and utterly beautiful on the plate.
How to cook
Plating & presentation
Stand each poached pear upright in the centre of a shallow bowl or flat plate, stalk pointing skyward. Spoon the glossy reduced vanilla syrup generously around the base and over the pear so it pools invitingly. Tuck a small sprig of fresh mint beside the stalk or scatter a few toasted flaked almonds around the base for texture. The simplicity of a single perfect pear on a white plate is the whole point — resist the urge to add more.
Dana's tip
Choose pears that are ripe but still firm — an overripe pear will turn to mush during poaching. Bosc and Conference varieties hold their shape best. The pears are even better made a day ahead: cool them completely in the syrup, refrigerate overnight, and the flavour deepens beautifully. Bring to room temperature or warm gently before serving. The leftover syrup is wonderful stirred into sparkling water or drizzled over vanilla ice cream.
