Chocolate Panna Cotta
A silky, trembling Italian panna cotta made with rich coconut milk and dark chocolate instead of cream — completely dairy-free without sacrificing an ounce of indulgence. Set to a perfect wobble and finished with a glossy chocolate drizzle.
How to cook
Plating & presentation
Unmould each panna cotta onto the centre of a chilled flat plate so it sits proud and trembling. Drizzle a thin ribbon of melted dark chocolate over the top, letting it run down the sides in an elegant, uneven pattern. Place three or four fresh raspberries alongside for colour and acidity, and finish with a single mint leaf or a tiny pinch of flaky sea salt. The contrast of the deep brown panna cotta against the white plate and jewel-bright raspberries is quietly stunning.
Dana's tip
The wobble test is your best guide — a perfectly set panna cotta should tremble like jelly when you gently shake the mould, not sit rigid and firm. If it is too stiff, reduce the gelatine by half a gram next time. Full-fat coconut milk is essential here; reduced-fat versions have too much water content and the panna cotta will not set properly. Shake the cans vigorously before opening to ensure the cream and liquid are fully combined.
