Chicken with Peppers & Rosemary
Golden bone-in chicken pieces braised with sweet roasted peppers, rosemary, garlic, and white wine into a rich, sticky pan sauce. A beloved Italian Sunday classic — pollo con peperoni — that fills the kitchen with the most incredible aroma.
How to cook
Plating & presentation
Serve directly from the pan at the table for a true Italian Sunday feel. For plated portions, spoon a generous mound of the sweet pepper and tomato sauce into the centre of each warmed wide bowl or plate, then place one or two pieces of chicken on top so the golden skin faces upward. Spoon extra sauce over the chicken, scatter with fresh parsley, and finish with a drizzle of olive oil.
Dana's tip
Bone-in, skin-on chicken is non-negotiable here — the bones add richness to the braising liquid and the skin crisps up beautifully during the initial sear. Boneless chicken breast will dry out and turn stringy during the long braise. If you want to use breast meat, add it in the last 15 minutes only and reduce the braising time accordingly.
