How to cook

Plating & presentation

Fan the turkey slices slightly overlapping on a large warmed platter so the spiral of sage butter filling is visible in each slice. Spoon the golden pan sauce over the top and scatter the roasted whole garlic cloves and crisped sage leaves from the pan around the meat. Finish with a squeeze of lemon and a drizzle of olive oil. The contrast of the golden exterior and the herb-flecked interior makes this dish as impressive to look at as it is to eat.

Dana's tip

Resting the turkey is just as important as cooking it — the fibres relax and reabsorb the juices, so every slice stays moist rather than running dry on the board. If you are short on time, a minimum of 8 minutes rest is needed. Longer is always better. Cover it well with foil and a clean tea towel to keep the heat in while you finish the sauce.
