How to cook

Plating & presentation

Serve straight from the roasting dish for a rustic, convivial presentation — place the dish in the centre of the table and let everyone help themselves. For plated portions, spoon a generous mound of the golden potato and tomato base onto each warmed plate and lay a fish fillet skin-side up on top. Spoon the roasting juices over everything and finish with a wedge of lemon and a fresh rosemary sprig.

Dana's tip

The thinner you slice the potatoes, the faster and more evenly they cook — a mandoline gives you the most consistent results. If you do not have one, use the thinnest setting on a box grater or slice very carefully with a sharp knife. The potatoes must be fully tender before the fish goes on top, or you will overcook the fish waiting for the potatoes to finish.
