How to cook

Plating & presentation

Place one golden chicken breast slightly off-centre on each warmed plate. Spoon the bright, glossy lemon-caper sauce generously over and around the chicken so it pools invitingly on the plate. Scatter a pinch of freshly chopped parsley over the top and add two or three thin lemon slices alongside for colour. A simple side of steamed greens or roasted potatoes completes the plate beautifully.

Dana's tip

The key to a silky, emulsified sauce is to take the pan off the heat before adding the final butter and to swirl rather than stir — heat breaks the emulsion and turns the sauce greasy. If the sauce does split, remove from heat, add a splash of cold stock, and whisk vigorously to bring it back together.
