Tuscan White Bean & Rosemary Soup
A soul-warming Tuscan classic — creamy cannellini beans slow-simmered with rosemary, garlic, and ripe tomatoes into a thick, velvety soup. Finished with a generous drizzle of extra-virgin olive oil, it is humble, hearty, and utterly timeless.
How to cook
Plating & presentation
Ladle the thick, russet-coloured soup into wide, deep bowls. The surface should be glossy and inviting. Finish with a generous spiral of bright green extra-virgin olive oil, a few whole cannellini beans reserved from the pot placed on top, and a crack of coarse black pepper. A small sprig of fresh rosemary laid across the bowl adds a beautiful rustic touch.
Dana's tip
The secret to the creamiest texture is to partially blend the soup rather than blending it fully — the whole beans give body and the blended beans give silk. For an even richer result, mash a handful of beans against the side of the pot with a fork before blending; this releases their starch and thickens the broth naturally without any cream.
