Aloo Tikki
Crispy, golden spiced potato patties pan-fried until crunchy on the outside and fluffy within. One of India's most beloved street-food starters — naturally gluten-free, dairy-free, and vegan, with a warming spice blend that makes them completely addictive.
How to cook
Plating & presentation
Arrange the golden tikki in a slightly overlapping row or loose cluster on a warm plate. The deep golden-brown crust with its slightly uneven, craggy surface is the visual centrepiece — it signals the crunch inside. Spoon a little green mint chutney and tamarind chutney in small pools beside the tikki or in separate dipping bowls. Scatter a few thin rings of red onion and fresh coriander leaves over the top, finish with a squeeze of lemon and a dusting of chaat masala, and serve at once.
Dana's tip
The two non-negotiables for perfect aloo tikki are completely dry mashed potato and chilling the shaped patties before frying. Any moisture in the mash makes the tikki fall apart; any warmth makes them stick to the pan. Rice flour is the gluten-free binder of choice here — it creates a far crispier crust than chickpea flour or cornflour. If the mixture still feels too soft to shape after chilling, add another tablespoon of rice flour. For extra flavour, add a tablespoon of finely chopped fresh mint to the mixture along with the coriander.
