Roasted Saffron Carrot Halwa
A rich, jewel-coloured Indian gajar halwa made with slow-roasted grated carrots, coconut cream, saffron, and cardamom — dairy-free, gluten-free, and completely nut-free. Deeply fragrant and fudgy, finished with a golden saffron glaze and edible rose petals.
How to cook
Plating & presentation
Serve the halwa in a shallow bowl or on a small plate, either spooned loosely or cut into neat diamond shapes if set in a tin. The colour should be a deep, vivid orange-red from the carrots, with a glistening golden saffron glaze across the top that catches the light. Scatter a pinch of dried rose petals over the surface for a romantic, festive contrast — the soft pink against the deep orange is striking. A few extra saffron strands or a sliver of edible gold leaf adds a celebratory touch for special occasions. The halwa is traditionally served warm, but it is equally beautiful at room temperature when it holds its shape more firmly.
Dana's tip
The roasting step is non-negotiable for the best flavour — it takes an extra 25 minutes but transforms the carrots from sweet and mild to deeply caramelised and complex. Use the sweetest, most vibrant orange carrots you can find; avoid pre-grated supermarket carrots, which are often dry and flavourless. Freshly ground cardamom from whole pods makes a significant difference to the fragrance — pre-ground loses its floral notes quickly. The saffron glaze is a simple finishing touch but it elevates the presentation dramatically; do not skip it. This halwa is completely nut-free, making it one of the most inclusive Indian desserts you can serve — safe for guests with tree-nut or peanut allergies without any compromise on flavour.
