Lemongrass Chicken Skewers
Fragrant Southeast Asian chicken skewers marinated in a punchy blend of lemongrass, galangal, garlic, and fish sauce — grilled until caramelised and smoky. Served with a bright, tangy nuoc cham-style dipping sauce. Gluten-free, dairy-free, and peanut-free.
How to cook
Plating & presentation
Fan the golden-charred skewers across a long plate or wooden board, slightly overlapping so the caramelised edges and turmeric-golden colour are fully visible. Tuck thin cucumber slices along one side and scatter generous sprigs of fresh coriander and mint around the skewers — the green herbs against the deep golden-brown chicken make for a vivid, appetising plate. Place lime wedges at each end of the platter and the nuoc cham dipping sauce in a small bowl alongside. The char marks and sticky caramelised patches on the chicken are a feature, not a flaw — they signal flavour and should be on full display.
Dana's tip
Mincing the lemongrass to an almost-paste consistency is essential — coarse or roughly chopped lemongrass leaves unpleasant fibrous strands in the marinade that stick to the chicken and burn on the grill. Use the back of your knife to bruise the stalk first, which releases the aromatic oils, then mince as finely as you can with a sharp knife, or blitz briefly in a small food processor. Galangal gives a more authentic, piney, slightly medicinal depth than ginger — if you can find it fresh at an Asian supermarket, it is worth using. The nuoc cham dipping sauce is all about balance: taste it repeatedly as you build it and adjust each element until no single flavour stands out above the others.
