Yachaejeon (Korean Vegetable Pancake)
Crispy, golden Korean savoury pancakes packed with julienned courgette, carrot, spring onion, and red pepper — made with a light rice flour batter for a gluten-free version that fries up beautifully crisp. Served with a sharp soy and sesame dipping sauce. Dairy-free and vegan.
How to cook
Plating & presentation
Arrange the wedges in a loose fan or overlapping stack on a dark slate or ceramic plate so the golden, lacy edges and the vivid colours of the vegetables showing through the batter are on full display — the red pepper, green spring onion, and orange carrot make these pancakes as visually striking as they are delicious. Scatter a pinch of toasted sesame seeds and a few fine spring onion rings over the top. Place the dipping sauce in a small, shallow bowl alongside. The contrast between the deep golden crust and the colourful vegetable filling is the visual centrepiece — make sure the pancakes are well crisped before serving.
Dana's tip
Two things make the difference between a crispy yachaejeon and a soggy one: squeezing the courgette completely dry before it goes into the batter, and using cold sparkling water instead of still. The carbonation creates a lighter, lacier batter that crisps up far better in the hot oil. Do not crowd the pan — one pancake at a time, spread thin, and leave it completely undisturbed until the edges are set and golden. Rest the cooked pancakes on a wire rack, never on kitchen paper; the paper traps steam underneath and softens the base within minutes. A cast-iron or heavy non-stick pan holds heat better than a thin pan and gives a more even, deep golden colour.
