Gỏi Cuốn (Vietnamese Fresh Rice-Paper Rolls)
Light, vibrant Vietnamese fresh spring rolls filled with rice vermicelli, crisp vegetables, fresh herbs, and prawns — wrapped in translucent rice paper and served with a tangy hoisin-free, peanut-free dipping sauce. Naturally gluten-free and dairy-free.
How to cook
Plating & presentation
Arrange the rolls on a long rectangular plate or a wooden board, either whole or sliced in half on the diagonal to show the vivid cross-section of pink prawns, green herbs, and white noodles through the translucent wrapper. The rolls should be tightly packed with filling so they hold their shape cleanly when cut. Place the dipping sauce in small individual bowls alongside. Garnish the plate with a few extra sprigs of mint and coriander and a wedge of lime. The translucent rice paper showing the colourful filling inside is the visual centrepiece of this dish — tight rolling and generous, well-arranged filling make all the difference.
Dana's tip
The single most important technique for perfect gỏi cuốn is not to over-soak the rice paper. Pull it from the water when it still feels slightly stiff — it will soften fully in the 30 seconds it takes you to arrange the filling, and a slightly under-soaked wrapper is far easier to roll tightly than a soggy one that tears. Work on a damp surface rather than a dry one; rice paper sticks to dry boards. Arrange the prawns cut-side up right at the bottom of the wrapper so their pink colour is the first thing visible through the paper — this is the classic Vietnamese presentation. Keep a damp cloth over finished rolls to stop them drying out while you work through the batch.
