How to cook
Plating & presentation
Serve in wide, deep bowls — a mound of fluffy jasmine rice on one side and the curry ladled generously alongside so the vivid red-orange sauce pools around the base of the rice. The prawns should be pink and plump, sitting proud of the sauce with the red pepper strips and wilted greens visible throughout. Lay a few rings of red chilli across the surface, scatter fresh coriander sprigs and whole Thai basil leaves over the top, and tuck a lime wedge at the edge of each bowl. The deep coral of the curry sauce against the white rice and the green herbs is the visual signature of this dish — it should look vibrant, glossy, and abundant.
Dana's tip
The single most important rule for prawn curry is to add the prawns last and cook them briefly — 3 to 4 minutes maximum. Prawns are fully cooked the moment they turn uniformly pink and opaque; every second beyond that makes them tougher and smaller. Build the sauce completely before the prawns go in, so all you need to do at the end is drop them in and watch them. Raw king prawns give the best result — frozen raw prawns work well if defrosted thoroughly and patted dry before adding. Do not use pre-cooked prawns; they will be rubbery after even 2 minutes in the hot sauce. Thai red curry paste varies significantly in heat between brands — taste yours before cooking and start with 2 tablespoons if you are unsure, adding more once the sauce is built. For a shellfish-free version, replace the prawns with chicken thigh pieces (add with the coconut milk and simmer for 18–20 minutes) and replace the fish sauce with coconut aminos.
