Vietnamese Lemongrass Chicken with Rice
Boneless chicken thighs marinated in lemongrass, garlic, fish sauce, and lime — pan-seared until deeply caramelised and served over steamed jasmine rice with a bright, tangy dipping sauce, fresh cucumber, and herbs. A Vietnamese street-food classic. Gluten-free and dairy-free.
How to cook
Plating & presentation
Serve in wide, shallow bowls or on plates with a slight rim. Mound the jasmine rice to one side and fan the sliced chicken alongside it, cut-side up so the golden caramelised crust is fully on display — this is the visual centrepiece of the dish. The turmeric in the marinade gives the chicken a vivid golden-amber colour that contrasts beautifully with the white rice. Tuck thin cucumber rounds between the chicken slices and scatter a generous handful of fresh coriander and mint leaves over the top. Finish with rings of spring onion and a lime wedge at the edge. Serve the nước chấm in a small bowl on the side — its pale amber colour and the flecks of red chilli make it a visual element in its own right. The dish should look fresh, vibrant, and abundant.
Dana's tip
Mincing the lemongrass finely is worth the extra effort — roughly chopped lemongrass leaves fibrous, woody pieces in the marinade that stick to the chicken and burn in the pan. Use only the bottom 10cm of the stalk where it is pale and tender; the upper green section is too tough and fibrous to eat. Peel away the outer two or three layers first, then mince as finely as you can — almost to a paste. A food processor or spice grinder makes this much easier. The caramelisation in step 3 depends on a hot, dry pan and chicken that is not too wet from the marinade — if the pan is not hot enough or the chicken is too wet, it will steam and turn grey rather than sear and turn golden. For a fish-free version, replace all the fish sauce with coconut aminos — use the same quantities throughout, both in the marinade and the dipping sauce.
