Thai Coconut Chicken Curry
Tender chicken thighs simmered in a rich, fragrant Thai coconut curry sauce built on red curry paste, lemongrass, kaffir lime leaves, and two tins of coconut milk — finished with fish sauce, lime juice, and fresh Thai basil. Served with steamed jasmine rice. Gluten-free and dairy-free.
How to cook
Plating & presentation
Serve in wide, deep bowls — a mound of fluffy jasmine rice on one side and the curry ladled generously alongside so the two sit together without fully mixing. The sauce should be a deep, burnished orange-red, glossy and rich, with the chicken pieces, red pepper strips, and wilted spinach clearly visible. Lay a few rings of red chilli across the surface, scatter fresh coriander sprigs over the top, and tuck a lime wedge at the edge of the bowl. A few whole Thai basil leaves placed on top at the last moment add fragrance and a beautiful finishing touch. The contrast between the white rice and the vivid, jewel-toned curry is the visual signature of this dish.
Dana's tip
Chicken thighs are essential here — do not substitute breast meat. Thighs have enough fat and connective tissue to stay moist and tender through 20 minutes of simmering in the coconut milk; breast meat will dry out and become stringy in the same time. The cracking technique for the coconut cream is the single step that most home cooks skip and most restaurants do not — it takes only 3 minutes and makes a significant difference to the depth and gloss of the finished sauce. Thai red curry paste varies enormously in heat between brands; taste yours before cooking and adjust the quantity accordingly. For a fish-free version, replace the fish sauce with coconut aminos — use the same quantity and add a small pinch of extra salt to compensate for the difference in salinity.
