Chinese Vegetable Fried Rice
A fragrant, wok-tossed Chinese fried rice packed with carrots, peas, mangetout, baby corn, and spring onions — seasoned with coconut aminos instead of soy sauce, and completely free from eggs and sesame. Light, savoury, and deeply satisfying. Gluten-free, dairy-free, vegan, soy-free, egg-free, and sesame-free.
How to cook
Plating & presentation
Serve in deep bowls or on wide, shallow plates — the rice should be piled generously rather than spread flat, so the different colours of the vegetables are visible throughout. The finished rice should look lightly golden in places, with vivid flecks of green from the mangetout, peas, and spring onions, and bright orange from the carrots. Scatter a small handful of fresh coriander leaves over the top and lay a few thin rings of red chilli across the surface for colour and heat. Place a lime wedge at the edge of each bowl. The dish should look vibrant and freshly tossed — not flat or uniform. Serve immediately while the rice is still steaming.
Dana's tip
Coconut aminos is the key ingredient that makes this dish work without soy sauce or tamari. It has a slightly sweeter, milder flavour than soy sauce, so use a generous hand — 3 tablespoons for 4 servings is the right starting point, and you can add more to taste. It is widely available in health food shops and online, and it is naturally gluten-free, soy-free, and sesame-free. The white pepper is not interchangeable with black pepper here — white pepper has a sharper, more penetrating heat that is characteristic of Chinese fried rice and works differently in the dish. If you do not have a wok, use the largest, heaviest frying pan you own and heat it until it is genuinely smoking before adding anything. A crowded, lukewarm pan is the enemy of good fried rice — if your pan is not large enough to hold all the rice in a single layer, cook it in two batches.
