Plating & presentation
Stand the sushi rounds upright on a long rectangular plate, slate board, or wooden platter in a neat row or a loose cluster so the vivid cross-sections of avocado, cucumber, red pepper, and pickled daikon are fully visible — the colourful filling is the visual centrepiece of the dish. Scatter a pinch of toasted sesame seeds over the tops of the rounds. Place a small mound of pale pink pickled ginger at one end of the plate and a small smear of wasabi at the other. Pour the tamari into a small, shallow dipping dish alongside. The contrast between the jet-black nori, the white rice, and the jewel-coloured fillings makes this one of the most visually striking dishes in the Asian repertoire — tight rolling and clean slicing are what make it look professional.
Dana's tip
Two things make the difference between sushi that looks professional and sushi that falls apart: properly seasoned, cooled rice and a sharp, wet knife. The rice must be at room temperature before you roll — warm rice makes the nori limp and the roll impossible to seal cleanly. Cool it quickly by fanning as you fold in the seasoned vinegar. For slicing, a wet blade is non-negotiable — wipe and re-wet between every single cut, not every few cuts. Do not press down when slicing; use a long, smooth sawing motion with almost no downward pressure. If your avocado is very ripe, add it last when spreading the fillings so it does not get crushed under the rice. Wrapping the bamboo mat in cling film before rolling prevents rice from getting trapped in the bamboo and makes clean-up much easier.
